Tomato and Basil Marinade
⅓ cup chopped basil
4 chopped tomatoes
⅓ cup extra virgin olive oil
¼ cup balsamic vinegar
⅓ cup chopped spring onions
3 cloves chopped garlic
cracked black peppercorns
- Combine the ingredients in a bowl or bag.
- Add the appropriate amount of salt and pepper to suit your taste.
- Add meat or fish then allow to marinate in the fridge for 2 to 4 hours.
- Recipe suggested for fish but would work well with chicken also.
