Piri-Piri Chicken with Tangy Blood Orange
⅓ cup fresh blood orange juice
¼ cup extra virgin olive oil
1 tbsp sweet paprika
2 tbsp brown sugar
2 cloves chopped garlic
2 sliced chilli
1 tsp ground black pepper
2 sliced blood orange
1¾ lb free range chicken
- Combine the marinade ingredients in a small jug and whisk until combined.
- Top the chicken with a few slices of the blood orange and brush with the marinade, ensuring that all parts of the bird are covered.
- Lay a few more slices of blood orange over the middle of the chicken.
