Lemon and Mint Chicken or Lamb
Ingredients
1 cup dry white wine
⅓ cup fresh lemon juice
2 tbsp grated lemon zest
½ cup olive oil
¼ cup chopped fresh mint
3 tbsp chopped shallots
1 tbsp fresh rosemary
salt
pepper
Method
- Combine the wet ingredients and lemon zest in a mixing bowl
- Add the dry ingredients and the amount of salt and pepper you prefer and whisk.
- Marinate in the fridge: 2-4 hours for chicken and 4-6 hours for lamb.
