Herb-marinated Pork Fillet
1 zested lemon
4 juiced lemon
120 ml olive oil
6 cloves minced garlic
1½ tbsp chopped fresh rosemary
1 tbsp chopped fresh thyme
2 tsp Dijon mustard
2 tsp salt
½ tsp ground black pepper
2 or more pork fillets
- Combine all the ingredients in a large strong resealable plastic bag.
- Add the pork fillets and turn to coat with the marinade.
- Squeeze out the air and seal the bag.
- Marinate the pork in the refrigerator for at least 3 hours but preferably overnight.
