Curry Marinade
Ingredients
4 tbsp curry powder
1 tsp cinnamon
2 tbsp dry sherry
¼ cup fresh lime juice
¼ cup fresh lemon juice
⅓ cup peanut oil
3 tbsp chopped shallots
¼ cup chopped fresh coriander
1 tbsp brown sugar
Method
- Blend the curry, cinnamon, sherry and citrus juices in a food processor.
- Gradually add the oil.
- Stir in shallots, coriander, chillies and brown sugar.
- Allow to marinate in fridge overnight, less for seafood or Tofu
